Hi - also meant to say it was delightful to read your post - nearly 90% of active posts seem nowadays to be with selling and nothing to do with people sharing information and advice - I remember when this forum started and that was what it was all about - so sad its now like an evening newspaper with sales adverts.

Hi, Ireli or wild asparagus is out now. My tc father in law gathers and sells it, apparently it is also in the shops but very expensive.

I tried to find out where he gathers it but it is a closely guarded secret as, apparently, he gets 25tl a bunch for it.

Like other people I found it a tat strong flavoured, perhaps it's because I'm used to "forced" asparagus which is very mild. I always steam it, perhaps its better used for soup? Back in East Anglia we had asparagus fields and I used to buy the "sprew" i.e. the broken bits, for quiche - scrummy and cheap.

Wild asparagus: For the best taste only pick the top six inches or so of the asparagus, it should just break off easily without too much snapping! Don't try to take the whole thing as it gets tougher the closer to the ground you go. Once you have enough - a handful of tips will do you to start with - take it back home and give it a good wash under clean running water. Chop it into one inch bits and gently fry it a little till it goes softer, crack an egg into the frying pan and mix it in with the asparagus to form scrambled egg with asparagus mixed in. Give that a try and use olive oil to fry with please, it adds to the flavor but remember it gets hot fast and tends to smoke if you get it too hot.
Where to find it: Anywhere where the ground is damp will do the trick but don't try to spot the asparagus itself, look instead for the small thorny bushes that normally catch your legs when you are out walking, you will find the asparagus there for sure. Keep your eye's open for the asparagus that grows around two to three feet tall as well - once you spot it the first time it is easy to see, the trick is finding out what it looks like to start with. Grows up against old stone walls where there is sun and best found after a period of rain or damp - from now until April it is there for the finding and the exercise will do you good anyway. Good luck.

If there is any out now then they are proberly grown with chemicals and no flavor i have recently bought some from supreme as every now and then they sell them off season but they have no taste when they are picked fresh in april they are delicious very strong smell but thats the best part

Kavankoy if you dont want it to taste to strong first boil it a little then fry it in olive oil and scramble some egg in it it is really delicious i dont boil mine i just fry it in olive oil straight away
