Short crust abounds nearer Christmas in all stores but I haven't seen much since then.

The milfoy is precut into little squares. I've not seen any in larger sheets. If you're in the Alsancak/Lapta area and you want shortcrust or flaky pastry,I could make you some asit's my forte. It freezesvery well.

Blue dream-what sort of pastry are you looking for?

There are many types as the responses you have had would suggest.

Have a look at this, and then elaborate please-

http://en.wikipedia.org/wiki/List_of_pastries

I am sure someone will help with your pastry needs, but without specifics it's a big ask.

HI I think Blue dream is looking for the raw product as in shortpaste, or sweet paste, not the finished products derived from the paste.
Having been a pasty chef for over 40 years some people find it hard to make good pastry and rely on the bought product, there is no shame in this.
Back to the subject.

Blue dream the only place I have seen different forms of pastry is in the south all good supermarkets there have a good selection, I have bought different pastes as it was easier than making it with the time I had available running our buisiness, you can buy rolls of short paste and rolls of puff paste along with the correct type of filo paste to make all your sweet and savour dishes, they sell yufka here but it is not the same.

I can understand buying ready made puff or filo pastry,as they are hard work to make for domestic use.

But basic shortcrust is simple ,especially if you have a processor/ mixer as I am sure most people would have.

Even if you don't have a mixer ,reverting to the 'old fashioned' rubbing in technique works well and is very relaxing.

I recommend Delia's recipe for shortcrust as seen here-

http://www.deliaonline.com/recipes/type ... astry.html

You can make this into sweet pastry by adding sugar.

I personally use 'Remia' brand sunflower marge instead of lard which is hard to get here and gives good(and healthier) results.

Hope this helps.

Thank you for the compliment(sort of).
I think you will find most of the top chefs in the world, and on TV are male.
I am 6ft 1 inch and an ex rugby player.
Very sexist remark all in all.

You can make this into sweet pastry by adding sugar.

I should take the largest van you can find, because I'm sure you will have punters from all of the place to buy the Short crust. In this heat I don't find it blends together very well and am happy to cheat!!

I make it all the time, but use a food processor; it's very quick that way . I have air con in the kitchen which helps.

You are right, plus it must be put in the fridge to rest so it will be cool to use after 30 mins.

Ask Elaine at Upper Crust, she makes her own shortcrust pastry for her pies and pasties etc, it is melt in the mouth delicious.

I did ask Elaine how she makes her shortcrust-See my message no 9-it was Elaine that told me to use Remia Brand marg instead of butter, and I have had great results and very similar to her pastry which I think is excellent.
I make it in batches in food processer using dough hook, then wrap in cling film and put in fridge for 30 mins or so.

Still on the subject of shortcrust pastry, I just have to put a word in here for Fatouche's Bakewell Tarts...they are to die for. Bought some in the bakery at M&S yesterday and they are not a patch on her's. Will be back in September to indulge in them.keep up the good work Fatouche!

Retired, thank you so much for the glowing accolade! I do pride myself on using the best ingredients, and I do have a light touch where pastry is concerned.

Unfortunately I won't be at lambousa when you return as I'm starting a full time job in the bakery section of a brand new independent supermarket opening in Catalkoy very soon.

Should you want to order anything however, you can ring or text me on 0533 8730 123, or email me at

Don't really know Catalkoy well as usually shop at Lapta side. Will there be a selection of your of your baking in the new supermarket. I have tried a few things from your stall on Lambousa Market and they have all been excellent. Maybe you could give us the name of the store and directions?

No it's not going to be an Erulku.

As for what's going to be sold in the bakery, I have no idea! I don't decide what they're going to sell......

The store is on the main road in Catalkoy past the Cratos. It is the very next building on the left after the furniture store called Podium (incoroporating Burotime)
