Slow Cooker Lamb Kleftiko

Serves 4 - 6
Cooking time 7-8 hours in a slow cooker on setting 1
I can only do 4 as size of slow cooker 3.5l is just right for that. You may have a larger one.
4 to 6 pieces 1.2 – 1.5kg of meaty bone-in lamb leg portion sized pieces
1 onion sliced
1 carrot sliced
2 celery sticks sliced
2 – 3 cloves garlic crushed or chopped roughly
2 tsp dried oregano
2 bay leaves
2 sprigs fresh rosemary (or one tbsp dried)
300ml dry white wine
50g capers drained
3 tbsp olive oil
1 tbsp flat leaf parsley, roughly chopped
400g tin of chopped tomatoes or 4 fresh ripe tomatoes skinned and chopped
3 medium small potatoes, peeled and cut length ways
Salt and ground black pepper
Season the meat and brown on all sides in a large dry frying pan on a high heat adding plenty of seasoning.
Turn regularly to prevent burning. You are only sealing the meat to keep the juices in.
This should take no longer than 3 - 5 minutes.
Put all the ingredients in the slow cooker, meat first potatoes third to last with tomatoes on top and lastly sprinkle the olive oil over the top. To be fair it’s no biggy if you get the order wrong it will all taste the same. Check the setting.
Sit back and wait. Set if off in the morning and by dinner time it will be perfect. With one hour to go check meat is tender and adjust seasoning.

Use the fore leg for the best meat and also try neck - that is really tasty.
No matter how hard the past, you can always begin again.
