Easy marmalade recipe

you will need 3 oranges, 1 grapefruit either colour your choice and one lemon try and pick thick skinned fruit it makes it easier later ( and i don't mean start calling them names to see if there thick skinned or not and 625gm of sugar)

wash the fruit well make sure there is no blemishes on them peel the oranges with a potato peeler and finely shred the zest (julienne strips) grate the zest of the grapefruit and lemon place all this into a large glass or microwave safe bowl, now juice all the fruit and add to the zest, remove the membranes from the fruit ie the segment parts chop them up a bit and add to the bowl leave the pips in they help it set, all you should be left with is the pith which you throw away

cover and microwave for 10mins based on 800w, after 10mins stir with a wooden spoon (wooden spoons stops the hot liquid boiling up) and add 625gm of sugar stir to help dissolve, cover and microwave for another 10mins, after its done remove cover stir again and cook further 10mins uncovered when done stir and leave to cool for about 5mins keep stirring a few times and spoon out the pips as it cools they rise to the top, before putting into warmed jars
makes about 3 or 4 jars dependent on size

Thanks Andrew and you make it lookso easy. We have a site here full of lemons and oranges (not for eating) and will try myself. Why does my wife find cooking so challenging? Do you know which way round the bread goes into to toaster?

thanks, will pass it on. 'Im downstairs makes the stuff. just done another batch which would not set, so he bunged it in the freezer. We now have frozen marmalade chunks! Maybe he needs to try this new recipe.

Mmm Marion bet those frozen marmalade chunks would taste just fine in long cool glass of lemonade and maybe a drop of something else now let me see mmm lovely!!

the culinary delights and challenges of this household all stem from 'Im downstairs. I gave up years ago in the interests of survival for the rest of the family. Mind you, I am the proud owner of a certificate of Merit for my bread Pudding at Cudham Village Show (where I used to live in U.K), . Not a very good judge though cos what she didn't know was that it had all got burnt and I rescued a couple of bits, smothered them in castor sugar, shoved them on a plate - and voila! Doesn't say much for the other entries, does it. come to think of it, might try these marmalade chunks with ice cream! any other ideas anyone?

i have been asked to try and amend the recipe for diabetics so will let you know if its possible on a domestic scale

Back in UK and have now printed off recipe. Oranges were in tact as not accessible from outside! Will let you all know how it turns out if they travelled well!! Guess syrup can go on ice cream but have great faith in your recipe.

lee amended recipe only zest one orange grate all the rest it was too zesty with 3 oranges
