I normally catch the Turkish Airways early bird at 0415 and its always been open. Similarly the DF shops in Arrivals/Baggage Reclaim have always been open on return.
I suspect that they are required to be open when there are plane movements.

But be prepared to find an assistant lying down behind the counter fast asleep, bless em. I've seen it twice, once in Duty Free and once in one of the shops on the ground floor. I felt sorry having to wake her up, she looked absolutely shattered.

Do remember that if you are changing planes in Turkey and you buy booze, you are likely to loose it at security. Ercan Duty Free is not able to officially seal the carrier bags like they can at other international airports so you are limited to 100ml and what will go in the plastic bag.

Not so, I have had bags sealed at Ercan and transferred at Istanbul without problem

Sorry if I have mislead. I haven't bought any spirits recently due to having had it taken off me at IST in the past.
