Rajah Indian Spices - Garam Masala

Good Evening All,

I'd be very grateful if anyone could let me know where I might be able to find Rajah-brand Indian Spices, or any reasonably-priced brand of Garam Masala.

I know what you mean about 'reasonably priced'!

I think that I've seen Schwartz brand in ILELI but it's about as expensive as gold dust!

It is easy enough to make, just dry fry (toast) your spices, and whack 'em into a coffee grinder (makes the coffee taste exotic ) but it does take a bit of trial and error to get the mix to your own taste - the wife of a mini market owner in Leicestershire showed me how, but she just used to chuck in whatever was to hand, so I never really got a reliable 'recipe'

The old guy in Lefkosa opp the mosque in the corner shop sells some amazing spices that he measures out into small packages.

Checked in Tempo Catalkoy this morning, they do indeed have Rajah brand spices but unfortunately no garam masala. Maybe you could try one of their other branches.

Thanks for all your replies, Folks. I'll try Tempo in Karaolangolu today, and i'll buy all the whole spices I can find, there and in Lefkosa, and start experimenting.

Just back from Tempo - lots of Rajah spices, including Garam Masala, with 2019 "use-by" dates.

Not many whole spices though, so I'll do some research on the spices required, before visiting the shop in Lefkosa.

Always best freshly ground. Make your own Garam Massala with a grinder. Honestly fresh ground spices lift any curry, the only thin I buy ground is Tumeric. I have a curry leaf tree in my garden, Lemongrass and Kaffir lime too.
Some are wise and some otherwise.....

You should always try to buy whole spices and grind them. Many powders are contaminated with animal droppings and bulked out with sawdust.

There are dozens of ways of making your own Garam Masala. Try this one. This is authentic and based on 3 tablespoons yield.

1 tablespoon Coriander Seeds.
1 teaspoon Cumin Seeds.
1 teaspoon Green Cardamom
1 teaspoon Cloves.
1 teaspoon Black Peppercorns .
2 sticks of Cinnamon. approx 2 inches long.
3 Bay Leaves.
Half a Nutmeg.
4 Black Cardamoms
1 Star Anaisse .

Then Grind them either by hand or in a grinder. Make sure your grinder has steel blades. Otherwise it's good night grinder.
