Angelo Appassimento has an intense clear ruby red color with beautiful purple markings. The wine is full-bodied with a nice soft and persistent taste . There are plums and jam wrapped in delicious spices from the barrel storage.

The Primitivo and Negroamaro grapes for Angelo are harvested from sun-saturated vineyards in Puglia, which form the heel of the Italian boot country.
The manufacturer uses the "late harvest" method. Ie. that the grapes have been allowed to hang on the vines for 3-4 weeks longer than usual, the bunches have been cut in so that the bunches can dry in the sun.
When the correct sugar content of the grapes can be measured, they are harvested and brought to the winery, where they are processed. The much sun in Puglia is the alpha and omega for the grapes to achieve lots of concentration.
Fermentation takes place with the yeast type Saccharomyces bayanus at low temperatures 18 ° -22 ° C for up to 45 - 60 days. This results in the high alcohol content. The wine matures for six months in French oak barrels before being bottled.
