Recipe for Lentil soup anybody?

Love the lentil soup you get in most traditional restaurants. Has anybody got the recipe please?

Fry a chopped onion until soft and a chopped tomato and a diced potato. Add red lentils about a large cupful cover with a fair amount of boiling water cook until soft. Add salt and pepper then blend.Melt a little butter add some paprika pour a little on top when you serve. Celals recipe Brend.

I will try Celals recipe first and then try the recipe tips one with the chilli & cumin

When butternut squash (Macanu Kabak) is available this soup is one of our favourite lentil soups....

Curried squash, lentil & coconut soup
Ingredients:-
• 1 tbsp olive oil
• Teaspoon chilli flakes
• 1 Medium onion (or two small) diced
• 3 cloves garlic minced or finely chopped
• 1 kg butternut squash, peeled, deseeded and diced
• 200g carrots, diced (approx. 3 medium sized)
• 1 tbsp curry powder (medium madras is good)
• 100g red lentils
• 700ml vegetable stock (1 stock cube)
• 1 can coconut milk
• Fresh coriander and naan bread, to serve


Method
1. Heat the oil in a large saucepan, add chilli flakes, onion and garlic and cook over medium heat until colour changes to light brown then add the squash and carrots, sizzle for 1 min, then stir in the curry powder and cook for 1 min more. Tip in the lentils, the vegetable stock and coconut milk and give everything a good stir. Bring to the boil, then turn the heat down and simmer for 15-18 mins until everything is tender.

2. Using a hand blender or in a food processor, blitz until as smooth as you like. Season and serve scattered with roughly chopped coriander and some naan bread alongside.

I make a simple lentil soup with red lentils, chopped potato and 1 carrot in stock pot, cover with water and simmer until everything's cooked. Don't add too much carrot as it then becomes too sweet. You'll need to sort out what quantities suit you as the lentils swell up, but mash everything with a potato masher at the end so it's chunky. Add salt and pepper to taste (I don't use much salt) but THEN slice up a lemon, put it at the bottom of the soup plate, add your soup and squish in the lemon slices. Delicious, simple, very low fat.
