Hi,

Would it be possible to list the different meat cuts on here (translated)? I just bought "Dana Sotelik" thinking it is lamb but I'm not sure now?

Tavuk = Chicken
Tavuk Taslik = Chicken Hearts
Tavuk But = Chicken Thigh
Tavuk Ciger = Chicken Liver

Doh, Lamb Rogan Josh is off the menu then tonight, anyone know a good Dana Sotelik (Veal) recipe???

Dana is beef by the way. Kiyma means mince.

Dana sotelik is veal for sautéing - it should be tender beef to use in any dish - Beef rogan josh is really very nice as long as you cook it until the beef is really tender - no one wants to chew on tough meat in a curry.

Beef stifado
Beef and ale stew - use Guinness or other dark beer
Beef in red wine

This list is endless

Oooh.......just what I needed to know. Braising steak, for home made steak & kidney pie or steam pudding, well when it gets colder obviously. Like I would buy in Waitrose, tender and lean.... But 1st winter here and when asked for it, given rump steak....tough!!!! And please, where is the best place to buy it. Sorry to butt in. !!!! Thankyou

I thoroughly recommend buying a slow cooker - no meat will end up tough...

It uses light-bulb amounts of electricity and turns even the toughest meat into melt in the mouth joy!

They are really cheap but I don't know where in Cyprus they can be had.... anybody?

Anyway... the pressure cooker is another alternative...

For pies etc. rump steak is a bit expensive - you need good marbling in the meat to make the tastiest stews. Osso buco made with shin of beef on the bone cooked in the slow cooker is fantastic... a cheap cut too.... you want each one two inches thick ideally. The marrow melts into the gravy making is decadently rich.

We bought our slow cooker from the Tefal shop opposite HSBC,did a lovely kleftico in it last sunday and a beef pot roast this sunday mmmmm
