I've seen Fb posts from some smaller shops saying they are closed Thursday and re-opening Monday - is this the same for supermarkets?

Shops like Şah (definitely closed on 13th according to their Facebook page) and Erulku tend to close for 1 day at Bayram. If you're on Facebook you could check. Other markets like Supreme tend to remain open unless the government tells them to close.

Somehow I think this year many more places will be open as they cannot afford to close.

I think it would have been a nice gesture if the big supermarkets had closed to give their staff the day off. Most businesses have been hammered this last year but supermarkets have been pretty much unaffected and with more people eating in probably increased their profits.
Their staff worked throughout the lockdowns at some risk to themselves so a thank you from their bosses
