Requirements to open bank account with Turkish bank ?

Do you need to have an address and/or residency to get a bank account with a Turkish bank ?

Which ones would you recommend ? Customer service and good interest rates on euro ?

Local banks have less requirements to open a account ?

I agree, Nesrin at the main Garanti branch in Girne is really helpful, and her English is excellent. If you do open an account with Garanti be sure to download their banking app, it is really useful and allows you to do many banking tasks easily online.
