Just in case you are I thought you might like to know that Illeli have frozen roasted parsnips on sale, I have never seen fresh ones here but maybe someone knows if they can be bought in the North.

They had fresh a couple of weeks ago. I have a whole pork loin crackling and all! I am very excited about it!

One advantage of living in Ireland, will be out Christmas morning picking sprouts and digging parsnips.
